Seafood stuffing for salmon

Ingredients

Quantity Ingredient
6 tablespoons Butter
2 mediums Onions, minced
cup Mushrooms, finely chopped
3 eaches Clove garlic, crushed
2 mediums Bunches parsley, chopped
½ cup Fine bread crumbs
4 ounces Crabmeat, cut in small pieces
4 ounces Shrimp, shelled and deveined, cut in smalll pieces
4 ounces Scallops, cut in small pieces
2 teaspoons Lemon juice
¼ teaspoon Cayenne
Salt and pepper to taste

Directions

Melt butter in med. saucepan, then add onions and mushrooms, saute until soft. Then add garlic, and saute until tender, but not browned. Add parsley and remove from heat.

Stir in bread crumbs, and add assorted seafood, lemon juice, cayenne and salt and pepper.

Fill salmon with mixture and bake as directed. Source: Official Expo 86 Cookbook
