Seared lamb chops with rocket and parmesan

2 | tablespoons | Olive oil |
2 | Red onions; sliced | |
1 | 40 g pack rocket | |
50 | grams | Parmesan cheese; shaved (2oz) |
3 | tablespoons | Flat leaf parsley; roughly chopped |
3 | tablespoons | Balsamic vinegar |
Directions
Cook the lamb chops according to pack instructions.
Heat one tablespoon of the olive oil in a frying pan over a medium heat.
Add the onions and cook for 5 minutes until well-browned and set aside.
Mix together the fried onions with the rocket, parmesan, parsley, balsamic vinegar and rest of the olive oil.
To serve:Place the lamb chops on a serving plate and top with the rocket and parmesan mix.
