Shells with creamy wine sauce

Uncooked | ||
¼ | cup | Minced onion |
¼ | cup | Water |
¼ | cup | Chablis or other dry white |
Wine | ||
¼ | cup | Neufchatel cheese with herbs |
And spices | ||
Ground pepper | ||
Vegetable cooking spray |
Directions
Cook pasta according to package directions, omitting the salt and fat.
Drain cooked pasta, and set aside.
Coat a saucepan with cooking spray, and place over medium heat until hot. Add onion; saute 2 minutes or until tender. Add water and wine, and cook 1 minute. Add cheese, and cook 1 minute or until well blended, stirring with a wire whisk. Add pasta, tossing gently to coat. Cook 1 minute or until thoroughly heated, stirring constantly.
Sprinkle with pepper. Yield: 2 servings (serving size: 1 cup).
