Sherried sweet potatoes and apples

Ingredients

3 larges Sweet potatoes
3 Granny Smith Apples --
Peeled and cored
¼ cup Unsalted butter
¼ cup Lemon juice
¼ cup Brown sugar
¼ teaspoon Cinnamon
cup Dry sherry

Directions

Put sweet potatoes in a large kettle with enough water to cover. Boil for 35 minutes, until tender.

Drain and cool. (May be prepared in advance and refrigerated overnight.

Peel the sweet potatoes, cut lengthwise into sixths, and crosswise into ½-inch pieces.

Cut apples lengthwise into sixths and crosswise into 1½-inch peices.

In a large skillet, cook the apples in the butter over moderate heat, stirring, for three minutes. Stir in the lemon juice, brown sugar, cinnamon and sherry. Bring to a boil, and simer three minutes. Add sweet potatoes and cook, stirring gently, for two minutes, until heated through.

Transfer to heated serving dish.
