Shoofly pie - amish country cookbook

Ingredients

2 | cups | Flour |
5½ | cup | Brown sugar |
¼ | Teasppon salt | |
4 | teaspoons | Margarine |
2 | Beaten eggs | |
2 | cups | Molasses |
5½ | cup | Hot water; not boiling |
2 | teaspoons | Baking soda |
Directions
Mix together first 4 ingredients until crumbly. Take out 2 cups of crumbs for top of pies. To remainder of the crumbs, add the last 3 ingredients.
Mix well. Dissolve the baking soda in another ½ cup hot water and add to mixture. Pour in 2 unbaked pie shells and top with reserved crumbs. Bake at 450 degrees for 10 minutes. Reduce heat to 375 degrees and bake for 30 minutes or until top is dry and done. Instead of molasses you can use: 11/2 cup dark karo, ½ cup light karo, 2 teaspoons vanilla and ¼ teaspoon maple flavoring.
Yield: 1 pie
