Shrimp fricassee

Ingredients

2 tablespoons Butter
2 tablespoons Flour
cup Canned tomatoes
2 tablespoons Finely chopped tomatoes
2 tablespoons Chopped green peppers
¼ teaspoon Garlic minced
¼ teaspoon Salt
¼ teaspoon Pepper
teaspoon Thyme
½ teaspoon Parsley flakes
1 Bay leaf
½ teaspoon Celery salt
1 pounds Shrimp cooked, peeled and
Deveined
2 cups Cooked rice

Directions

1) Preheat oven to 350. F

2) Melt butter in large frying pan. Add flour; cook constantly, until lightly browned.

3) Add tomatoes, green pepper, garlic, salt, thyme, parsley, bay leaf, celery salt, pepper, and salt; simmer 15 minutes.

4) Add shrimp to frying pan; simmer for 5 minutes.

5) Pack cooked rice into greased custard cups; bake for 5 minutes.

6) To serve, unmold rice unto serving platter. Pour shrimp mixture over rice molds.
