Shrimp fricassee

1½ | cup | Canned tomatoes |
2 | tablespoons | Finely chopped tomatoes |
2 | tablespoons | Chopped green peppers |
¼ | teaspoon | Garlic minced |
¼ | teaspoon | Salt |
¼ | teaspoon | Pepper |
⅛ | teaspoon | Thyme |
½ | teaspoon | Parsley flakes |
1 | Bay leaf | |
½ | teaspoon | Celery salt |
1 | pounds | Shrimp cooked, peeled and |
Deveined | ||
2 | cups | Cooked rice |
Directions
1) Preheat oven to 350. F
2) Melt butter in large frying pan. Add flour; cook constantly, until lightly browned.
3) Add tomatoes, green pepper, garlic, salt, thyme, parsley, bay leaf, celery salt, pepper, and salt; simmer 15 minutes.
4) Add shrimp to frying pan; simmer for 5 minutes.
5) Pack cooked rice into greased custard cups; bake for 5 minutes.
6) To serve, unmold rice unto serving platter. Pour shrimp mixture over rice molds.
