Ingredients

2 | larges | Potatoes; baked |
½ | cup | Plain yogurt |
3 | mediums | Carrots; grated |
1 | pinch | Curry powder |
⅔ | cup | Grated cheddar cheese |
Directions
1. Preheat oven to 350 degrees F 2. Cut the potatoes in half and scoop out the pulp. Reserve it for another meal. Cut each potato skin half into finger-size pieces. Place the potato skins on a baking sheet and set aside.
3. In a mixing bowl, blend together the yogurt, carrots, and curry powder.
Spoon a small portion of this mixture onto each piece of potato skin.
Sprinkle some cheese over the pilling, place skins in the oven and bake until the cheese has melted, 10 to 12 minutes. Let the skins cool slightly before serving them to young children.
