Smoked mussel mushrooms

Ingredients

4 larges Flat mushrooms
3 tablespoons Olive oil
1 150 gram can smoked mussels
1 15 grams can smoked oysters; roughly chopped
125 grams Wild mushrooms; ie shittake,
; oyster, roughly
; chopped (4oz)
1 Lemon; juice of
2 tablespoons Fresh parsley; chopped
Salt and freshly ground black pepper

Directions

Brush the flat mushrooms with oil and gently grill for 5 minutes.

Meanwhile, fry the wild mushrooms in a pan for 2-3 minutes. Stir in the mussels and oysters and cook for a further 2 minutes.

Add the lemon juice, parsley and season to taste.

Pile the mixture into the mushrooms. Serve garnished with green salad leaves and lemon wedges.
