Smoked turkey sandwich with roasted red peppers

Ingredients

Quantity Ingredient
A handful of fresh spinach; washed and quickly
; steamed
A good hearty Kaiser roll
Homemade roasted garlic balsamic mayo; (recipe below)
4 ounces Smoked turkey; thinly sliced
ounce Good Vermont cheddar; sliced
3 ounces Roasted red peppers; (available in the
; grocery store or
; made at home)

Directions

After you have washed the spinach, put it in the microwave (covered), and cook on high for about 30 seconds. When it is slightly wilted run it under cold water until chilled. Squeeze dry.

Split open the roll and spread both sides with the mayo. Put the turkey, the cheese, the peppers, and the wilted spinach. Sprinkle with salt and a few grinds of the pepper mill. Cut in half and wrap tightly for the mountain.

For the mayonnaise:

Peel one head of garlic. Just cover with olive oil in an ovenproof dish and bake at 350 degrees for ½ hour or until golden brown. Allow to cool, (The roasted garlic may he stored in an airtight container in its oil in the refrigerator for up to a month.) In a small bowl, mash 3 of the roasted garlic cloves with the back of a spoon. Add 1½ tablespoons of balsamic vinegar. Mix well. Add ½ cup of good quality mayonnaise and mix well.

Season with a little salt and pepper. This is also good with roast beef, as a salad dressing, or spread on fish before baking.
