1 Servings
Ingredients
Quantity | Ingredient | |
---|---|---|
¼ | pounds | Spicy sausage (Italian, chorizo or bratwurst) |
1 | teaspoon | Vegetable oil |
2 | tablespoons | Chopped onion |
2 | tablespoons | Diced sweet green pepper |
⅔ | cup | Canned tomatoes (undrained) chopped |
¼ | cup | Long-grain rice |
1 | tablespoon | Tomato paste |
¼ | teaspoon | Salt |
Pinch each dried thyme and hot pepper flakes |
Directions
In microwaveable pie plate, prick sausage all over with fork. Cover with waxed paper; microwave at High for 1½ minutes. Rotate and turn sausage over; microwave at High for 1 minute. (Or brown in skillet over medium-high heat.) Cut into thick slices.
Meanwhile, in saucepan, heat oil over medium heat; cook onion and green pepper, stirring occasionally, for 2 to 3 minutes or until softened but not browned.
Add sausage, tomatoes, rice, tomato paste, salt thyme and hot pepper flakes; bring to boil. Cover and reduce heat; simmer gently for 20 minutes or until most of the liquid is absorbed. Let stand for 5 minutes; stir well. Makes 1 serving. Note: If doubling this dish, the sausage will need an extra 2 minutes or so in the microwave.
