Sourdough apple-carrot bread

1 cup Sourdough starter
cup Sugar
¼ cup Melted butter
2 Eggs, slightly beaten
1 teaspoon Vanilla
1 cup Shredded green apple, unpeeled
½ cup Shredded carrot
1 teaspoon Cinnamon
1 teaspoon Baking powder
½ teaspoon Salt
cup All-purpose flour
½ cup Chopped nuts
½ cup Coconut

Directions

Measure out sourdough starter in a large mixing bowl. Mix together sugar, butter, eggs, vanilla, apple and carrot and add to sourdough.

Mix together dry ingredients and add to sourdough mixture. Blend well. Fold in nuts and coconut. Pour into greased loaf pan. Bake at 350 for 50 to 60 minutes or until done. Cool 5 to 10 minutes.

Remove from pan. Cool and serve. Refrigerate any leftovers. Makes 1 loaf.
