Soysage (brown)

Ingredients

4 | cups | Soy pulp (from making soymilk) or cooked cracked soybeans |
2 | cups | Whole wheat flour |
1 | cup | Wheat germ |
¾ | cup | Oil |
1¼ | cup | Soymilk (or other liquid) |
1 | cup | Nutritional yeast flakes |
1½ | teaspoon | Fennel seed |
1 | teaspoon | Black pepper |
¼ | cup | Soy sauce |
3 | teaspoons | Oregano |
2 | teaspoons | Salt |
½ | teaspoon | Cayenne |
2 | tablespoons | Brown sugar |
2 | tablespoons | Garlic powder |
2 | tablespoons | Wet mustard |
2 | teaspoons | Allspice |
Directions
Mix ingredients together. Oil oven-proof bowl or empty tin can. Fill it & cover with foil. Steam on rack for 1½ hours, or pressure cook in 5 cups water for 30 minutes. Let cool, then slice and fry.
Here, in Louisiana, we like things spicy, so I add a little more cayenne and mustard and some finely chopped onion and garlic to boot.
