Spam italian rice salad

9 | Green onions, chopped | |
1½ | teaspoon | Paprika |
½ | teaspoon | Cumin |
¼ | cup | Olive oil |
2 | cans | Chicken broth (14 1/2 oz) |
1 | can | SPAM Luncheon Meat, cut into strips (12 oz) |
1 | pack | Frozen peas, thawed and drained (10 oz) |
1 | Green bell pepper, cut into 1/4\" strips | |
1 | Red bell pepper, cut into 1/4\" strips | |
1 | pack | HORMEL sliced Pepperoni (3 1/2 oz) |
½ | cup | Chopped fresh parsley |
Directions
In 3-quart saucepan over medium heat, cook rice, green onions, paprika, and cumin in oil until onion is tender. Stir in broth. Cook over low heat 20-30 minutes or until rice is tender and all liquid is absorbed. Meanwhile, in skillet over medium heat, saute SPAM 4-5 minutes. Combine rice mixture, SPAM, peas, bell pepper, pepperoni, and parsley.
