Ingredients

2 teaspoons Olive oil
1 slice Eggplant; (1/4-inch)
3 slices Zucchini; (1/4-inch)
1 slice Onion; (1/4-inch)
1 large Whole-wheat pita pocket
1 ounce Honey mustard or Dijon mustard
3 ounces Sliced turkey breast
1 slice Tomato; (1/4-inch)
1 slice Avocado; (1/4-inch)
Sunflower seeds

Directions

Drizzle olive oil on eggplant, zucchini, and onion. Grill for approximately 15 minutes on medium heat. Let vegetables cool to room temperature. Cut off the end of the pita pocket to make opening for stuffing. Spread mustard evenly on inside of pocket. Stuff everything into pocket. Top with sunflower seeds. Serves 1.

NOTES : I never would have guessed that a simple, little recipe could cause such a stir--but "Wrong, Old Weatherbreath!" My healthful pita hero with turkey has prompted many questions about its origin. So...here's the story.

It's really no big deal. About five or six years ago, when I was trying to find something around the house to snack on, all I could come up with were some leftover turkey, an assortment of vegetables, and a couple of nearly stale whole-wheat pita pockets. So, I grilled a few slices of zucchini, onion, and eggplant and tossed them into the pita pocket, added some turkey slices, tomato, and mustard, topped it all off with a generous pinch of sprouts, and voil'a--a legend was born. This is a meal that is tasty, loaded with essential nutrients, and very low in fat. So, unless you have Charlie Gibson's taste in food, give "Spencer's Healthful Hero" a try.
