Spicy bean soup

1 | cup | Tomato puree |
½ | cup | Baked beans; (from can) |
1 | Capsicum chopped | |
1 | Spring onion with greens chopped | |
1 | Celery stick chopped | |
1 | Tomato chopped | |
1 | slice | Bread toasted and broken to bits |
1 | tablespoon | Tomato sauce |
1 | teaspoon | Red chilli garlic sauce |
½ | cup | Boiled rice |
Salt to taste | ||
Pepper to taste | ||
1 | teaspoon | Butter or oil |
3 | cups | Water or vegetable stock |
Directions
Heat butter, add capsicum, spring onion, celery, stir fry till tender.
Add beans, tomato, stir for a minute or two.
Add puree, stir for further 3-4 minutes. Add stock.
Bring to a boil. Add rice. Simmer for 10-12 minutes.
Add bread pieces, sauces, salt and pepper.
Serve hot.
