Spicy migas

½ | Chopped yellow onion | |
½ | Chopped green pepper | |
2 | Jalapeno chiles; diced fine | |
1 | Tomato; seeded, diced | |
8 | Well beaten eggs | |
4 | Corn tortillas; cut in strips, and fried; or use tortilla chips | |
1 | cup | Chedder cheese |
1 | cup | Salsa |
Directions
Melt butter in large saute pan, add onion and green pepper and cook about 5 min or until onions are translucent. Add jalapenos, tomato and eggs, scramble until eggs start to set.
