Spicy migas

Ingredients

Quantity Ingredient
4 tablespoons Butter
½ Chopped yellow onion
½ Chopped green pepper
2 Jalapeno chiles; diced fine
1 Tomato; seeded, diced
8 Well beaten eggs
4 Corn tortillas; cut in strips, and fried; or use tortilla chips
1 cup Chedder cheese
1 cup Salsa

Directions

Melt butter in large saute pan, add onion and green pepper and cook about 5 min or until onions are translucent. Add jalapenos, tomato and eggs, scramble until eggs start to set.
