Spicy mango salsa

½ cup Coarsely-chopped mango
2.00 tablespoon Finely-diced red onion
1.00 teaspoon Finely-diced jalapeno pepper
2.00 tablespoon Fresh lime juice
Chopped fresh cilantro; to taste
Salt; to taste
Freshly-ground black pepper; to taste

Directions

Combine the mango, onion, jalapeno, cilantro and lime juice. Season to taste with salt and pepper. Cover and set aside. May be prepared up to 1 day in advance, covered and refrigerated. Bring to room temperature before serving. This recipe yields about 1 cup of salsa.
