Spicy mango salsa

2.00 | tablespoon | Finely-diced red onion |
1.00 | teaspoon | Finely-diced jalapeno pepper |
2.00 | tablespoon | Fresh lime juice |
Chopped fresh cilantro; to taste | ||
Salt; to taste | ||
Freshly-ground black pepper; to taste |
Directions
Combine the mango, onion, jalapeno, cilantro and lime juice. Season to taste with salt and pepper. Cover and set aside. May be prepared up to 1 day in advance, covered and refrigerated. Bring to room temperature before serving. This recipe yields about 1 cup of salsa.
