Spicy sardines on toast

2 120 g can sardines in tomato sauce; (skinless and

1 tablespoon Mild curry powder
Freshly ground black pepper
Salad leaves
Mango or lime chutney

Directions

TO SERVE

Preheat the grill. Toast the muffins on both sides.

In a bowl mash the sardines and combine with the curry paste. Split the muffins in half and spread each half with the sardine mixture. Grind over some black pepper.

Place the sardine grillettes under a moderate grill for 4-5 minutes or until bubbling and hot. Serve at once, surrounded by salad leaves, with chutneys on the side.
