| 1 | tablespoon | Rice vinegar |

| 2 | teaspoons | Dijon mustard |
| Salt and pepper to taste | ||
| 1 | cup | Thickly sliced fresh strawberries |
| 1 | small | Thinly sliced red onion |

In a separate bowl whisk together vinegars, water, honey, mustard, salt and pepper. Add to the spinach and toss lightly. Add strawberries and onion. Toss lightly.
