Spinach salad with strawberry vinaigrette

Ingredients

3 tablespoons Sugar
3 tablespoons White Wine Vinegar
2 tablespoons Red Onion; Chopped
½ teaspoon Dry Mustard
¾ teaspoon Salt
cup Olive Oil
¾ cup Strawberries; Sliced
1 pack Fresh Spinach; (10 Oz)
1 cup Strawberries; Sliced
¼ cup Red Onion; Diced

Directions

In work bowl of food processor fitted with steel knife, process sugar, vinegar, the 2 T onion, dry mustard, and salt. With machine running, slowly pour oil through feed tube, processing until thick. Add the ¾ c strawberries; process until smooth. Chill several hours or overnight. In large salad bowl, combine remaining ingredients; toss with dressing. Serve immediately.

NOTES : This colorful, sweet combination is perfect for a spring dinner.
