Spring pea salad

10 | ounces | Fresh or Frozen Peas |
1 | cup | Celery; diced |
1 | cup | Cauliflower; chopped |
¼ | cup | Green or Spring Onion; thinly sliced |
2 | tablespoons | Pimiento; chopped |
1 | cup | Cashews; chopped |
¼ | cup | Cooked Bacon; crumbled |
½ | cup | Sour Cream |
1 | cup | Prepared Ranch Salad Dressing |
½ | teaspoon | Dijon Mustard |
1 | small | Clove Garlic; minced |
Directions
Rinse the fresh or frozen peas in hot water and drain thoroughly.
In a large mixing bowl, combine the peas with the celery, cauliflower, green onion, pimiento, cashews, and bacon. Mix in the sour cream.
In a separate mixing bowl, whisk together the Ranch salad dressing, Dijon mustard, and garlic.
Pour the mixture over the vegetables and toss gently to blend.
