Squash souffle

Ingredients

Quantity Ingredient
2 pounds Yellow squash OR -- green
Zucchini
1 Onion -- sliced
3 tablespoons Butter or margarine
3 Eggs
1 can Cream of mushroom soup
¾ teaspoon Salt
½ teaspoon Pepper
Cracker crumbs
Parmesan cheese
Beaten (or eggbeaters)

Directions

Preheat oven to 350. Butter casserole dish (or spray with Pam). Cook squash and onions until tender. Drain and mash. Fold in remaining ingredients. Place in casserole dish and top with cracker crumbs & parmesan cheese. Bake for 30 minutes.
