Squid with tomatoes

2 pounds Cleaned squid
3 tablespoons Olive oil
2 eaches Minced garlic cloves
½ teaspoon Salt
teaspoon Pepper
teaspoon Oregano
½ cup Dry sherry
1 tablespoon Tomato paste
2 eaches Fresh tomatoes, peeled, seeded and finely chopped or- 1 cup drained, chopped, canned tomatoes
1 tablespoon Chopped parsley
2 cups Cooked rice

Clean squid, pat dry and cut into small pieces. Fry garlic in hot oil one or two minutes. Add squid and simmer covered for five minutes.

Stir in the remaining ingredients except 2 tsp parsley and the cooked rice. Simmer uncovered 15 minutes, stirring occasionally until squid is tender. Serve with rice and garnish with the remaining parsley.
