Steamed vegetables with parmesan cheese - country living

Ingredients

2 | mediums | Carrots, peeled & cut lengthwise into eighths |
¼ | pounds | Green beans, stem ends & strings removed, if present |
1 | medium | Sweet red pepper, sliced lengthwise |
1 | medium | Yellow squash, cut lengthwise into shoestring strips |
1 | medium | Zucchini, cut lengthwise into shoestring strips |
1 | teaspoon | Olive oil |
¼ | teaspoon | Salt |
2 | tablespoons | Coarsely shredded Parmesan cheese |
Directions
1. In steamer or steamer basket placed in 5-quart kettle, steam carrots and green beans, covered, over boiling water 5 minutes. Add pepper, yellow squash, and zucchini. Cover and steam 3 to 5 minutes longer or until crisp-tender.
2. Remove vegetables to serving dish; toss with olive oil and salt.
Top with cheese and serve.
