Steamed vegetables with parmesan cheese - country living

Ingredients

Quantity Ingredient
2 mediums Carrots, peeled & cut lengthwise into eighths
¼ pounds Green beans, stem ends & strings removed, if present
1 medium Sweet red pepper, sliced lengthwise
1 medium Yellow squash, cut lengthwise into shoestring strips
1 medium Zucchini, cut lengthwise into shoestring strips
1 teaspoon Olive oil
¼ teaspoon Salt
2 tablespoons Coarsely shredded Parmesan cheese

Directions

1. In steamer or steamer basket placed in 5-quart kettle, steam carrots and green beans, covered, over boiling water 5 minutes. Add pepper, yellow squash, and zucchini. Cover and steam 3 to 5 minutes longer or until crisp-tender.

2. Remove vegetables to serving dish; toss with olive oil and salt.

Top with cheese and serve.
