Directions
Recipe by: Brenda Pittsley <brendap@...> Mix vinegar and mustard in small bowl. Whisk in both oils in thin stream. Add cheese, shallots and pepper. Let stand at least 30 minutes to blend flavors.
(Can be prepared 1 day ahead. Refrigerate) The book suggests this be served with a salad of spinach, curly endive and thinly sliced celery.
Someone wanted a blue cheese vinaigrette recipe a while back. I really like this one, which comes from a nifty little recipe book I got for subscribing to Bon Appetit a year or two ago. It calls for stilton but I use whatever blue cheese (gorgonzola, Roquefort) comes to hand or seems most affordable at the time.
