Bleu cheese dressing

1 servings

Ingredients

Quantity Ingredient
3 ounces Roquefort cheese
1 cup Mayonnaise
3 tablespoons Sour cream
2 teaspoons Fresh lemon juice
Kosher or sea salt
Freshly ground pepper to taste
1 To 2 drops Worcestershire sauce
1 To 2 drops Tabasco sauce
¼ cup Finely minced celery, including
Leaves
2 Scallions, minced
1 tablespoon Minced chives

Directions

"Use a good-flavored cheese such as Maytag, Roquefort, Stilton, Gorgonzola, or Danish bleu."

Break up the cheese into small pieces and reserve. In a mixing bowl, combine the mayonnaise, sour cream, lemon juice, salt, pepper, Worcestershire sauce, and Tabasco sauce and whisk well. Gently stir in the cheese, celery, scallions, and chives. Do not overmix, as the cheese will turn an unappetizing blue-grey. Keep refrigerated.
