Strawberry flan using pie crust mix

1 pack Fluffy white frosting*
1 cup Chilled whipping cream
cup Dairy sour cream
2 cups Pie Crust Mix
½ cup Sugar
½ cup Milk
2 Eggs
1 teaspoon Baking powder
1 teaspoon Vanilla
1 pint Strawberries -- sliced
Mint sprigs

Directions

*(7⅕ oz.) boxed mix Mix frosting mix, whipping cream and sour cream.

Cover and refrigerate at least 1 hour. Heat oven to 350. Grease and flour 4-cup flan pan. Beat Pie Crust Mix, sugar, milk, eggs, baking powder and vanilla on low speed, scraping bowl constantly, 30 seconds. Beat on medium speed, scraping bowl occasionally, 2 minutes; pour into pan. Bake until wooden pick inserted in center comes out clean, 2O to 25 minutes. Cool 5 minutes. Invert on wire rack; remove pan. Cool completely. Stir frosting mixture; beat until stiff.

Reserve ½ cup of the strawberries; fold remaining strawberries into frosting mixture. Spread in flan shell. Garnish with reserved straw-berries and the mint sprigs.
