Sweet and sour peppers and olives

Ingredients

1 tablespoon Olive oil
1 Orange pepper
2 tablespoons Caster sugar
Seeds from half a vanilla pod
2 tablespoons Balsamic vinegar
50 grams Pitted black olives

Directions

1 Heat the oil in a small pan. Remove the centre from the pepper and slice into strips. Fry the pepper for 1-2 minutes.

2 Add the sugar and vanilla seeds and allow to caramelise for 3-4 minutes.

Add the balsamic vinegar and olives and heat through for 2-3 minutes.
