Sweet fried bannanas

Ingredients

4 Bananas Large
2 tablespoons Sugar
2 tablespoons Lemon Juice
½ teaspoon Grated orange peel
3 ounces Rum
2 tablespoons Flour
1 tablespoon Olive oil
Egg white (beaten stiff)
½ cup Water
½ cup Olive oil (for frying)

Directions

Cut bananas into halves lengthwise. sprinkle with sugar, lemon juice, orange peel, and Rum. Let stand for 2 hours.

Make a batter of flour, water, and 1 tablespoon oil, mixing well, and blend in stiff egg white. Drain bananas, dip into batter and fry in hot olive oil until just golden in color.

Sprinkle with sugar and serve hot.
