Sweet potato and cajun chicken hash

2 mediums White sweet potatoes; peeled and diced
25 grams Butter; (1oz)
1 tablespoon Oil
2 Teaspoons; cajun seasoning
1 bunch Salad onions; diagonally sliced
2 Courgettes; diced
1 Red pepper; deseeded and diced
175 grams Cooked chicken diced; (6oz)
50 grams Grated Cheddar cheese; (2oz)

Directions

Bring a saucepan of lightly salted water to the boil, add the diced sweet potato and simmer for 10 minutes, until just tender. Drain.

Heat the butter and oil in a frying pan. Add the cajun seasoning, onions, courgettes and pepper and cook stirring occasionally for 2-3 minutes.

Stir in the sweet potato and chicken and cook for a further 5-6 minutes, until golden.

Transfer to a warmed serivng plate and sprinkle over the cheese.
