Sweet potato and cajun chicken hash

2 | mediums | White sweet potatoes; peeled and diced |
25 | grams | Butter; (1oz) |
1 | tablespoon | Oil |
2 | Teaspoons; cajun seasoning | |
1 | bunch | Salad onions; diagonally sliced |
2 | Courgettes; diced | |
1 | Red pepper; deseeded and diced | |
175 | grams | Cooked chicken diced; (6oz) |
50 | grams | Grated Cheddar cheese; (2oz) |
Directions
Bring a saucepan of lightly salted water to the boil, add the diced sweet potato and simmer for 10 minutes, until just tender. Drain.
Heat the butter and oil in a frying pan. Add the cajun seasoning, onions, courgettes and pepper and cook stirring occasionally for 2-3 minutes.
Stir in the sweet potato and chicken and cook for a further 5-6 minutes, until golden.
Transfer to a warmed serivng plate and sprinkle over the cheese.
