Sweet potato hash browns - country living

Ingredients

4 | mediums | (about 2 lb) sweet potatoes, peeled and coarsely chopped |
2 | teaspoons | Vegetable oil |
1 | small | Onion, chopped |
2 | teaspoons | Chopped fresh or 1/2 t dried |
Marjoram leaves | ||
½ | teaspoon | Salt |
½ | teaspoon | Ground black pepper |
1 | tablespoon | Butter |
1 | teaspoon | Brown sugar |
Directions
1. In 3-quart saucepan, place sweet potatoes and enough water to cover. Heat to boiling and cook 5 minutes; drain and set aside.
2. Meanwhile, in large nonstick skillet, heat oil over medium-low heat; add onion and saute 3 minutes. Add drained sweet potatoes, the marjoram, salt, and pepper. Cover and cook 15 minutes, stirring occasionally.
3. Increase heat to medium-high. Add butter and brown sugar to sweet-potato mixture. Cook, uncovered, 5 to 10 minutes longer or until potatoes are tender and begin to brown, turning occasionally with spatula. Serve warm.
