Sweet potato croquettes (fritters)

2 | cups | Mashed Sweet Potatoes |
3 | eaches | Eggs |
¾ | cup | Pecans; chopped finely |
¼ | cup | Hot Cream |
1 | pinch | Salt |
Cracker Crumbs; powdered |
Directions
Press potatoes through ricer. Add 2 well-beaten eggs, nuts cream and salt. More or less cream may be needed, depending on the consistency of the potatoes. Shape into flat rounds.
