Sweet potato croquettes (fritters)

Ingredients

Quantity Ingredient
2 cups Mashed Sweet Potatoes
3 eaches Eggs
¾ cup Pecans; chopped finely
¼ cup Hot Cream
1 pinch Salt
Cracker Crumbs; powdered

Directions

Press potatoes through ricer. Add 2 well-beaten eggs, nuts cream and salt. More or less cream may be needed, depending on the consistency of the potatoes. Shape into flat rounds.
