Sweet-potato fries - country living

Ingredients

4 mediums (about 2 lb) sweet potatoes
Vegetable oil for frying
Coarse salt or confectioners sugar (opt.)

Directions

1. Peel potatoes and cut into 3 by 3/4inch wedges. Place in large bowl, cover with cold water, and set aside to soak for 20 minutes.

2. In large skillet, heat ¼ inch oil until deep-fat thermometer registers 300'F. Drain potato wedges and pat dry. In batches, fry potatoes in oil, turning frequently-8 to 10 minutes or until lightly browned. Add more oil, if necessary. Drain on paper towels; sprinkle with salt or sugar, if desired, and serve.
