Sweet potato pie with pineapple

Quantity Ingredient
3 cups Mashed potatoes
2 cups Rich milk or light cream
3 tablespoons Unsalted butter
4 Separated eggs
¾ cup Brown sugar
½ cup Light corn syrup
1 teaspoon Salt
1 teaspoon Ginger
1 teaspoon Cinnamon
1 teaspoon Allspice
1 cup Drained crushed pineapple
1 Unbaked pie shell

Directions

Heat oven to 350. Mix potatoes with milk. Add butter, yolks, sugar, salt & spices & beat until light & fluffy. Blend in pineapple. Beat whites until stiff & fold into potato mixture. Pour mixture into shell. Sprinkle with cinnamon & bake 45 minutes. Serve warm.
