Sweet ricotta and candied fruit flautas

Ingredients

2 | cups | Ricotta cheese |
¾ | cup | Diced candied fruit* |
6 | Corn or flour tortillas | |
4 | tablespoons | Unsalted butter |
1 | tablespoon | Confectioners' sugar |
1 | teaspoon | Ground cinnamon |
Directions
*Such as candied orange or citron; or Mexican fruit paste; or apricots, figs, or dates.
1. Mix the ricotta cheese and diced fruit in a bowl. Spread about ⅓ cup of the cheese and fruit mixture in the center of a tortilla.
Roll up the tortilla flauta style; secure with a toothpick.
2. When ready to serve, melt 2 tablespoons of the butter in a large frying pan set over medium heat. Add 3 or 4 flautas and fry for 1 minute. Turn and fry on the opposite side until browned and crisp, about 1 minute more. Remove to a platter. Add the remaining 2 tablespoons butter to the pan. Continue with another round to cook all ot the flautas.
3. Sprinkle the sugar and cinnamon over the flautas. Eat while still warm and crunchy.
