Sweet-and-sour shrimp

Ingredients

1 can Cherry pie filling -- 21 oz
3 tablespoons Cider vinegar
3 tablespoons Brown sugar
1 teaspoon Ground ginger
1 each Green pepper -- cut 1/4 in
Strips
1 can Waterchestnuts -- sliced
Drained
1 pounds Shrimp -- peeled cooked
Deveined
Hot cooked rice

Directions

In a saucepan, combine pie filling, vinegar, brown sugar and ginger; mix well. Cook over med. heat until filling is hot and bubbly. Add green pepper, water chestnut and shrimp. Cook over med. heat for 4-5 min. or until shrimp are heated through. Do not overcook. Serve over rice. Yield: 4 servings.
