Sweet-and-sour shrimp - cooking light

2 | cups | Sliced carrot |
1½ | cup | Fresh snow peas |
Vegetable cooking spray | ||
¾ | pounds | Med. peeled/deveined shrimp |
½ | cup | Sliced water chestnuts |
1 | tablespoon | White vinegar |
1 | can | Sweet-and-sour simmer sauce |
Directions
Directions: Preparation time: 20 minutes Place water in a saucepan; bring to a boil. Add rice; cook according to package directions, omitting salt and fat.
Combine carrot and snow peas in a 1-quart casserole. Cover with casserole lid; microwave at HIGH 5 minutes or until crisp-tender, stirring halfway through cooking time. Drain; set aside. Coat a large nonstick skillet with cooking spray, and place over medium-high heat until hot. Add shrimp; stir-fry 3 minutes. Add carrot mixture, water chestnuts, and next 2 ingredients; stir well. Cook 1 minute or until thoroughly heated. Serve over rice.
