Tangy citrus loaf cake

Ingredients

1 | cup | Granulated Sugar |
½ | cup | Low fat Milk |
6 | tablespoons | Butter, softened |
2 | Eggs | |
1½ | cup | All-Purpose Flour |
1 | teaspoon | Baking Powder |
Zest of 1 Lemon, finely - grated | ||
Zest of 1 Orange, finely - grated | ||
Zest of 1 Lime, finely - grated | ||
Lemon, Orange, & Limes - Slices for Garnish | ||
½ | cup | + 1 T Granulated Sugar |
2 | tablespoons | Lemon Juice |
2 | tablespoons | Orange Juice |
1 | tablespoon | Lime Juice |
Directions
CAKE
GLAZE
1. Combine sugar, milk, butter and eggs. Mix well.
2. Blend in dry ingredients and lemon, orange, and lime zests.
3. Pour batter into a greased and floured 9-by-5-inch loaf pan.
4. Bake at 350øF for 50 to 60 minutes or until a tester inserted in center comes out clean.
5. Let cool slightly. Remove from pan.
6. Set cake on a piece of foil. Prick top of cake with a fork.
7. Mix together the ingredients for glaze in a small saucepan.
Cook and stir over low heat until sugar dissolves. Cook until slightly thickened.
8. Pour citrus glaze over top of cake.
9. Garnish with fresh lemon, orange, and lime slices. 10. Serve warm or at room temperature.
