Tangy lemon icing

cup Confectioners' sugar
1 Egg white
teaspoon Salt
2 tablespoons Melted butter
½ teaspoon Grated lemon rind
2 tablespoons Lemon juice
Yellow food coloring

Directions

Blend half of sugar, egg white, salt, melted butter & lemon rind in large bowl. Add 1 Tbls. lemon juice. Blend remaining sugar into mixture gradually. Stir in enough lemon juice to reach desired consistency. Tint.
