Tarragon and lemon turkey

1 | Clove garlic; crushed | |
2 | tablespoons | Freshly chopped tarragon |
1 | tablespoon | Wholegrain mustard |
2 | tablespoons | Lemon juice |
Salt and freshly ground black pepper | ||
4 | Turkey breast fillets | |
Fresh tarragon leaves to garnish |
Directions
1. Mix together the oil, garlic, tarragon, mustard, lemon juice and seasoning. Coat the turkey breasts and leave to marinate for 3-4 hours or overnight in the refrigerator.
2. Line a grill pan with foil and grill the turkey breasts for 12-15 minutes, turning and basting occasionally with the marinade, until cooked.
3. Garnish with fresh tarragon leaves and serve with long grain and wild rice.
