Tartar of smoked salmon on rye barquette

1 pounds Smoked salmon minced by
Hand
1 tablespoon Capers
Juice of 1 lemon only
1 teaspoon Minced onion
1 Egg white
½ teaspoon Fresh chives finely chopped
30 Barquettes-boat shaped

Directions

MIx well minced salmon, capers, lemon juice, onion, egg white and chives and portion into 30 equal parts. Top barquettes and serve. If barquettes are not available, use round 1 inch croutons or similar cracker as base.
