Tepary beans o'odham style

Ingredients

2 | cups | White or brown teparies |
8 | cups | Water |
1 | cup | Fresh green peeled chilies OR |
2 | cups | Enchilada sauce |
½ | teaspoon | Chiltepin pepper to red chili powder |
¼ | teaspoon | Salt |
Directions
Sort and wash beans well, then soak overnight. Bring to a boil in a large pot, then drain off the water. Add fresh water to cover beans, then add 2" more of water to the pot. Cover and simmer for 4 hours (or cook in electric slow cooker crock-pot on low for 6-8 hours). In the final half hour of cooking, add salt, chiles or sauce.
