Tepary beans o'odham style

Ingredients

2 cups White or brown teparies
8 cups Water
1 cup Fresh green peeled chilies OR
2 cups Enchilada sauce
½ teaspoon Chiltepin pepper to red chili powder
¼ teaspoon Salt

Directions

Sort and wash beans well, then soak overnight. Bring to a boil in a large pot, then drain off the water. Add fresh water to cover beans, then add 2" more of water to the pot. Cover and simmer for 4 hours (or cook in electric slow cooker crock-pot on low for 6-8 hours). In the final half hour of cooking, add salt, chiles or sauce.
