Three-pepper rub

Ingredients

Quantity Ingredient
3 tablespoons Olive oil
3 tablespoons Grated lemon zest
1 tablespoon Lemon juice
1 small Hot chile pepper, minced
1 tablespoon Black pepper coarsely ground
1 pinch Cayenne
1 teaspoon Salt

Directions

Combine all the ingredients, then smear the rub on the chicken. Put everything in a zip-top plastic bag and use it to massage the dry marinade onto the chicken breasts. Marinate for 2-4 hours.

Makes enough for 2 whole chicken breasts.
