3 | tablespoons | Grated lemon zest |
1 | tablespoon | Lemon juice |
1 | small | Hot chile pepper, minced |
1 | tablespoon | Black pepper coarsely ground |
1 | pinch | Cayenne |
1 | teaspoon | Salt |
Directions
Combine all the ingredients, then smear the rub on the chicken. Put everything in a zip-top plastic bag and use it to massage the dry marinade onto the chicken breasts. Marinate for 2-4 hours.
Makes enough for 2 whole chicken breasts.
