Tofu, lettuce and tomato sandwich

Ingredients

Quantity Ingredient
1 pounds Firm tofu
Oil for sauteing
Soy sauce
8 slices Whole or rye bread
Eggless mayonnaise
Stone-ground or Dijon mustard
Lettuce
Sliced tomato

Directions

Slice tofu into ¼" thick slabs. You will need about 1½ slabs for each sandwich.

Place a small amount of oil in a skillet (preferably non-stick), and fry the tofu on both sides until golden brown. Turn off the heat, sprinkle with soy sauce and turn to coat both sides.

Spread the bread lightly with mayonnaise and mustard, and top with fried tofu, lettuce and tomato. Submitted By MICHAEL ORCHEKOWSKI On 08-09-95
