Tofu, lettuce and tomato sandwich

Soy sauce | ||
8 | slices | Whole or rye bread |
Eggless mayonnaise | ||
Stone-ground or Dijon mustard | ||
Lettuce | ||
Sliced tomato |
Directions
Slice tofu into ¼" thick slabs. You will need about 1½ slabs for each sandwich.
Place a small amount of oil in a skillet (preferably non-stick), and fry the tofu on both sides until golden brown. Turn off the heat, sprinkle with soy sauce and turn to coat both sides.
