Tofu sandwich spread

10 | ounces | Firm tofu |
½ | \N | Green bell pepper; diced |
1 | \N | Stalk celery; diced |
1 | \N | Carrot; grated |
4 | smalls | Green onions; sliced |
1 | tablespoon | Parsley |
1 | tablespoon | Capers |
2 | tablespoons | Tofu based mayonnaise substitute |
1 | tablespoon | Prepared mustard |
½ | teaspoon | Fresh lemon juice |
¼ | teaspoon | Pepper |
¼ | teaspoon | Thyme |
Mix all ingredients together and serve on your favorite bread with sprouts, tomatoes and cucumbers.
