Tofu sandwich spread

4 servings

Quantity Ingredient
10 ounces Firm tofu
½ \N Green bell pepper; diced
1 \N Stalk celery; diced
1 \N Carrot; grated
4 smalls Green onions; sliced
1 tablespoon Parsley
1 tablespoon Capers
2 tablespoons Tofu based mayonnaise substitute
1 tablespoon Prepared mustard
½ teaspoon Fresh lemon juice
¼ teaspoon Pepper
¼ teaspoon Thyme

Mix all ingredients together and serve on your favorite bread with sprouts, tomatoes and cucumbers.
