Tomato, onion & cucumber relish

Ingredients

1 | medium | Onion |
1 | medium | Tomato, sliced thin |
2 | mediums | Cucumbers, sliced thin |
2 | tablespoons | Lemon juice |
½ | teaspoon | Salt |
½ | teaspoon | Cayenne |
Freshly ground black pepper | ||
½ | teaspoon | Cumin seeds, roasted |
Directions
Peel onion, slice thinly & soak in iced water for 30 minutes. Drain & pat dry. Separate rounds into rings.
In a serving plate, arrange tomato slices in a single layer, slight overlap is okay. Arrange cucumbers over the top. Scatter onion rings over the cucumbers. Sprinke with lemon juice, salt, cayenne, pepper & cumin. Toss just the onion rings, leaving everything else undisturbed.
