Ingredients

2 | cups | Raisins |
1 | tablespoon | Grated lemon peel |
1 | cup | Butter or margarine |
1½ | teaspoon | Vanilla |
1 | cup | Flour |
½ | teaspoon | Baking soda |
1 | can | Condensed milk(14oz) |
1 | tablespoon | Lemon juice |
1⅓ | cup | Brown sugar, packed |
2½ | cup | Oats, uncooked |
1½ | cup | Walnuts, chopped |
¼ | teaspoon | Salt(optional) |
Directions
Heat oven to 375 degrees. Grease a 13 x 9 inch baking pan. In a medium saucepan, combine raisins, milk, lemon peel and lemon juice. Cook over medium heat, stirring constantly, just until mixture begins to bubble.
Remove from heat; cool slightly; set aside.
Beat butter or margarine, sugar and vanilla until fluffy. Add remaining ingredients; blend until evenly mixed and crumbly. Reserve 2 cups. Press remaining mixture onto bottom of greased pan. Spread raisin mixture to within ½ inch of pan. Sprinkle with remaining oat mixture; pat lightly. Bake 25 to 30 minutes or until golden brown.
Cool completely. Cut into 1 x 2 inch bars. Makes about 4 dozen.
