Turkey salad with yogurt ^

1 | teaspoon | Salt |
2¼ | pounds | Turkey drumstick |
2 | Bananas, peeled and sliced | |
2 | Red apples, peeled, cored and diced | |
½ | Lemon, juice of | |
1 | small | Pineapple, in small cubes |
1¾ | cup | Seedless red grapes, halved |
1¾ | cup | Heavy whipping cream |
2½ | cup | Plain full cream yogurt |
⅛ | teaspoon | Salt |
⅛ | teaspoon | Pepper |
1 | tablespoon | Brandy |
6 | Sprigs fresh mint for garnish |
Directions
Cover drumstick with water, bring to a boil. Cover and simmer 1 hour.
Combine banana slices and apples; sprinkle with lemon juice. Add pineapple and grapes. Remove drumstick from broth and let cool.
Remove meat and cut into small cubes. Add to fruit. Whip cream until stiff. Mix with yogurt, saot, pepper and brandy. Pour over fruit and turkey; mix well. Garnish with mint and serve.
