Turkey salad with yogurt ^

Ingredients

Quantity Ingredient
4 cups Water
1 teaspoon Salt
pounds Turkey drumstick
2 Bananas, peeled and sliced
2 Red apples, peeled, cored and diced
½ Lemon, juice of
1 small Pineapple, in small cubes
cup Seedless red grapes, halved
cup Heavy whipping cream
cup Plain full cream yogurt
teaspoon Salt
teaspoon Pepper
1 tablespoon Brandy
6 Sprigs fresh mint for garnish

Directions

Cover drumstick with water, bring to a boil. Cover and simmer 1 hour.

Combine banana slices and apples; sprinkle with lemon juice. Add pineapple and grapes. Remove drumstick from broth and let cool.

Remove meat and cut into small cubes. Add to fruit. Whip cream until stiff. Mix with yogurt, saot, pepper and brandy. Pour over fruit and turkey; mix well. Garnish with mint and serve.
