Turkey-in-the-round sandwiches

Ingredients

Quantity Ingredient
2 smalls Italian bread shells; such as boboli
2 tablespoons Reduced-fat mayonnaise;
2 tablespoons Jalapepo cheese dip;
4 slices (thick) turkey breast; 6-oz total
8 slices (thin) onion; (red or white)
1 Roasted red bell pepper; cut into 4 pieces
¼ cup Cilantro leaves;

Directions

Briefly hold the bread rounds over an open gas flame, turning once, until they are lightly toasted on both sides, 30 - 40 seconds total.

Use a long, serrated knife to carefully slice each round in half crosswise. Spread 4 slices with a portion of the mayonnaise and cheese dip. Layer with meat, vegetables and cilantro. Close the sandwiches and cilantro. Close the sandwiches and serve. Yield 4 servings.
