Tuscan white beans with sage

Ingredients

½ | cup | Olive oil, divided |
2 | ounces | Prosciutto or pancetta, chopped fine |
1 | small | Onion, sliced |
3 | Garlic cloves, crushed | |
8 | Fresh sage leaves, chopped | |
2 | cans | Cannellini beans, rinsed and drained |
Salt to taste | ||
Pepper to taste | ||
Fresh sage for garnish |
Directions
In a small skillet heat 1 tablespoon olive oil and saute meat, onion and garlic 8-10 minutes, or until onion is tender. Stir in sage and cook 1 minute. Add beans and remaining olive oil, salt and pepper to taste and toss gently, taking care not to break the beans. Transfer to a serving dish and garnish with sage.
