Tuscan white beans with sage

Ingredients

Quantity Ingredient
½ cup Olive oil, divided
2 ounces Prosciutto or pancetta, chopped fine
1 small Onion, sliced
3 Garlic cloves, crushed
8 Fresh sage leaves, chopped
2 cans Cannellini beans, rinsed and drained
Salt to taste
Pepper to taste
Fresh sage for garnish

Directions

In a small skillet heat 1 tablespoon olive oil and saute meat, onion and garlic 8-10 minutes, or until onion is tender. Stir in sage and cook 1 minute. Add beans and remaining olive oil, salt and pepper to taste and toss gently, taking care not to break the beans. Transfer to a serving dish and garnish with sage.
